APPLE
AND SMOKED GOUDA STUFFED CHICKEN BREASTS
6 boneless, skinless chicken breasts
6 slices of smoked Gouda
1 small Granny Smith apple, cored & peeled, thinly sliced
Salt
Pepper
¼ cup flour
1 T. each olive oil and butter
15 Fresh sage leaves, roughly chopped
Cut pocket into
side of chicken breasts being careful not to cut through. Now flatten
breasts between 2 sheets of plastic wrap with a meat mallet or a
handy rolling pin until even thickness.
Stuff each chicken
breast with 1 slice of Gouda and several slices of apple. Close
with toothpicks. Season with salt and pepper, then lightly coat
with flour. Warm olive oil & butter in non-stick skillet then
add chicken and chopped sage; sauté 5-6 minutes turning once.
Continue cooking until juices run clear & breasts are nicely
browned. Serve with a drizzle of Lemon-Sage Sauce
Lemon-Sage Sauce

T. lemon juice
3 T. chicken broth
1-1/2 T. butter
Using same non-stick
skillet that we sautéed the chicken breasts in, add lemon
juice & chicken broth over low heat. Scrape any browned pieces
right into your sauce. Increase heat and add butter, swirl around
until sauce comes to a boil. Reduce until slightly thick; spoon
sauce over chicken when serving.
